They are perfect for snacks or lunch. (You could eat them for breakfast too!)
1 lb broccoli, chopped fine (stems too - they add a nice crunch!)
1 cup cheddar, shredded
1/2 cup Parmesan, shredded
3 eggs
1 cup almond flour (or wheat flour)
1 tsp oregano
1/2 tsp salt
1/2 tsp pepper
Mix all together.
Press and form tight 1"-2" balls.
Place on greased parchment paper on baking sheets.
Bake at 375 for 25-30 minutes or until a crispy brown.
